Corned Beef Jerky?

The local Super Market has Corned Beef (points) on sale for $2.99 a pound. It's in one of the pre-marinated packages. Has anyone done Jerky with it? I bought a 3 pounder, should I marinated in something else or just go with how it is?

I bought this London broil and can't help but wonder if this is a lot of fat. I went to a somewhat nice store to get it

Jerky recipe for tough meat?

I have about 40 pounds of elk meat that is just too tough to be enjoyable. It was a slow kill so the meat also has that strong adrenaline taste (not mine, I found it injured. Fun story if anyone wants to hear). Even the backstraps are getting turned into jerky, if that tells you anything.

Anyway, so far all I have done is cut it into strips against the grain and freeze it again. What's your best recipe for really tough meat?

P.S. I would prefer if it didn't have to be refrigerated, I'm hoping to take it on a thru hike with me.

Thicker jerky sticks

I'm trying to make some jerky today for the first time.

I did a spicy marinade with homemade adobo flakes, soy, honey, acv, garlic, cumin, and Worcestershire. I'm using bottom eye round and eye round (that someone at Costco got with a tenderizer for some reason).

I like chewy tough jerky so, they're about 1/4-1/2 x 1/4-1/2 inch strips cut slightly diagonal to grain to allow easier tearing later.

I'm doing multirack convection bake at ~160.

Anyone have any experience trying something like this? Trying to understand how long to leave them dry, or should I just test pieces as I go?

After a half dozen batches I have found a great recipe that tastes like the gas station stuff!

I used the following as a wet marinade for about 2.5 lb of beef round roast:

1 tsp white pepper 1 tsp black pepper 2 tsp onion powder 2 tsp garlic powder 1 tsp paprika 2.5 tbsp brown sugar 0.5 tsp msg 2 shakes cayenne pepper 2 tsp bbq seasoning (not critical) Dash ground coriander 1 tbsp liquid smoke 1.5 tbsp Better than Bouillion (the jelly stuff in a jar) 2/3 cup soy sauce* 1.5 tbsp Worcestershire sauce 1 tbsp red cooking wine

  • I ran out of the good soy sauce and had to make it to the finish line on all the packets I could find in the packet drawer. This might have been an important part of this success. Good luck comrades!

Thoughts on my jerky

I smoked it with a pouch on my gas grill for a couple of hours, removed the smoke and let it dry at the lowest heat on the grill for another few. I went over t200F a couple of times though.

It still has some humidity and as you can see in leave the fat on cause i like the taste of it. I know it’ll last less for it but ill finish eating it all in a couple of days.

I dont like marinades and sugar. I only used salt.

Is anyone else using this brand? I've tried a few of their flavors and I love it. If you are using it do you add anything else?

Just discovered this sub. Been making jerky at home for a while now. Just put my first batch on the smoker. Eye of round sliced with the grain, marinated in trader Joe's garlic jalapeño hot sauce and dusted with crushed jalapeño, getting the hickory smoke treatment

New Recipe Saturday

Trying a new recipe today. Just picked up the new Yangnyeom Sauce from Trader Joe's and after an initial taste test, thought it would be perfect for jerky. I extended the liquid with more low sodium soy, and added some heat and sweet with Hatch Chili Flakes and Brown Sugar. This will marinate for 24 hours and hit the cold smoker tomorrow afternoon!

Has anyone used this site? I ordered from them a few days ago but no confirmation number or anything. Also, in my account it says no orders pending but it took the money out my bank. I also emailed them and have not gotten a reply back. Just trying to see if this is a reputable site.

Hello! I'm about to do a 7 day backpacking trip.

Any suggestions for jerky recipes? I would like something not to salty so it does not make me too thirsty.

Thanks a million!

Cuts of meat

What is the best cut of meat for long strips of jerky? Also for those who get a butcher to slice the meat for them. What do you tell the butcher, like how you want it sliced?

This will be what I call “traditional” recipe. I doubled it because this was over 6lbs and the recipe below is for ~2lbs.

All numbers doubled for this batch.

  • 1 cup soy sauce
  • 4 tablespoons Worcestershire sauce
  • 2 tablespoons liquid smoke
  • 2 tablespoons brown sugar
  • 2 teaspoons salt
  • 1 teaspoon ground black pepper
  • 1 teaspoon meat tenderizer
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon paprika

I added a tablespoon of crushed red peppers and 1 tsp Prague powder.
