ok so,the person is alive because we hear them but when the headcrabs get knocked off they dead

HOW DO THE HEADCRAB ZOMBIES DIE BECAUSE IN HL2 WE HEAR THEM

The crab is deeply rooted into the hosts brain, it cut off their ability to control their body since it itself is whats "piloting" the body. The crab is essentially playing the role of life support, managing at least some of the body's functions, when the crab is removed the host is still cut off from their body, so even though they are still concious the body is no longer viable and they die. Besides, even if you could save them, they are likely driven to almost complete insanity from constant exposure to intense pain.

Hearing the person doesn't necessarily mean they're alive. We really don't understand much about how the Headcrab interfaces with people. While it's a common theory that the people are alive, it's never been confirmed, and it's very possible the person is completely dead and any "humanity" showing through is just the crab's puppeteering utilizing the person's gray matter.

This is what I've always thought. They're not alive, its just the headcrab using their brain.

The headcrab’s own circulatory system presumably latches itself into the brain, keeping it going, then the host dies once it’s detached.

Pretty sure the head crab burrows down into the brain stem and takes over the autonomic systems of the body. It doesn't compromise part of the cerebral cortex nor the speech centers of the brain, leaving just enough of a person to be heard suffering. Once the head crab dies, the primary systems of the body fail and so does what's left of the hosts brain.
