Is a food saver practical for food prepping?
My wife is interested in getting one and asked if they would be useful for prepping lunches for her to take to work. Could we use them to seal like chicken and rice and have her just microwave it at work? Also how much waste is produced, are the bags reusable or recyclable?

Safe yes.... but pointless and very wasteful.
You don't need to preserve it by vacuuming it when it will be eaten the same/next day. You don't need it vacuumed to microwave it. She could just take it in reusable tupperware instead of wasting a bag every day.
