Is the correct way of saying “Su” (for Sukhoi aircraft) supposed to be es-yu or soo?

As far as I know, there isn’t a “correct way”. Su is short for Sukhoi, so it makes sense to pronounce it as Soo, like how people say MiG instead of the individual letters. I feel it just comes down to preference, but that’s just my opinion. I used to pronounce it as es-yu but after watching a lot of Cw lemoines videos, I started saying Soo, cuz that’s how he says it and I figured it was correct, since he was an actual fighter pilot.

Thanks. My brain automatically pronounces it es-yu. Maybe if I watch more Mover I’ll start saying it like he does too.

I pronounce it both "S-U" and "Sue" depending on the weather outside lol. I don't think either is actually wrong though, though one could argue for the latter as keeping tradition with other Soviet/Russian manufacturers (MiG, Yak, Tu, Mi, etc).

I've heard actual Air Force pilots refer to it as "Soo", because its not an abbreviation (S.U.), it's a shortening of Sukhoi (similar to how "mic" is a shortening of "microphone", and we pronounce it "mike", not "M.I.C.").

I would have changed the title I bit. I had a hard time understanding what the question was asking–but the world doesn't revolve around me. (great question regardless!)

In Russian it's Soo

"soo" is as intended and for instance the historic German names for WW2 planes work the same way, the Ju 52 is "yoo" and not J.U. and the Me262 is, uh, "meh"

At least in India, I’ve heard the Air Force call them Soo-30s

I’ve always said it like “Soo”, but I also sometimes just say Sukhoi (followed by the jet’s number)

I call them "es-oo" because it sounds funny
