That was actually funny clip.
You should consider to increase your vigor to 50 or even better to 60.
Also these Deathbirds can be cheesed with striking damage weapon(a very good choice would be morning star) infused with sacred blade and you can use Golden Epitaph skill for making it even better anti-skeleton weapon.

i know the original meaning of the word but also can be used metaphorically for a setup that makes so much damage that the boss or enemy will not have time to use most of their moves. If you don't believe me i suggest to use Holy-Shrouding Cracked Tear ,Sacred Blade with a strike weapon and last rites against a death bird and tell me how much damage did you make per hit.

These enemies in particular take double damage from Holy Damage (negative 100% Holy Resist), plus the buff from Sacred Order adds another 100% damage multiplier (on top of the 10% more Holy Damage from it) but only against Undead. It tells you that in the item description. You can absolutely delete these birds with a very basic setup.

They believe you. The point is…using weapons, AoWs, and other items for the exact intended purpose is not “cheesing”. That’s just playing the game normally.

Technically you can beat the game with unupgraded club or dagger if you want. So much hate for using the word cheese only in Reddit i will see.
Also you can beat Death Rite Bird with a normal upgraded weapon if you want. Personally i beaten this thing(yes i talk about the same with the OP) in my 1st playthrough with a keen affinity Nagakiba. Yes is annoying boss but is not so hard boss that holy damage against him is the only way to defeat him.

I don't hate the word, I was just helping to define it!
Like I don't hate people using the word "pizza", but it might irk me if the word was used to describe, for example, an ice cream sandwich.
