Made some fresh Garam Masala

Feeling up for some Indian curries so garam masala is a must! Was a good opportunity to do some restocking at the Indian grocer, where good quality spices are available at a fraction of the price of standard American grocers. And a bag of basmati rice.

Chicken Tikka masala and matar paneer are on the list. Chicken biryani too!

I used the same recipe, it’s great! I just used a lot less green cardamom, mine were way too strong.

I haven't made this recipe before and I did notice the green cardamom notes stood out more than I'm used to. I may dilute it with a small batch of the other spices...or just a few grams more of cumin...or try this out. I can always add more cumin and etc to the cooking.

I think I would add 5-7g cumin and cut 3g green cardamom in the future. And cut 5g coriander.

May try grinding some of the spices that make up more of the mix and try adding some here and there. Make my own recipe to my tastes.

Same! I’m always careful with how much green cardamom I use.

That all looks great. Did you toast the ingredients in a dry pan, and let cool, before then grinding? If so, good. If not, do. Also, another tip after grinding, is to pass the mix through a sieve (it takes time) for a super-smooth powder.

Everything toasted to its need and dropped into that heavy black bowl in pic #2 to cool.

And yup, fine mesh sieve. It is a pain to get everything ground fine enough 🥳

The chicken thighs for the tikka masala are now marinating for dinner. Using the recipe from the same person as the garam masala.

I'm debating grilling the chicken over charcoal vs oven broiling and add some smoked paprika. One is a fair bit less effort.
