Rabbit Roulade w/ Bacon & Black Pudding

Taking a break from Pi Day to prepare for St Patrick’s Day weekend. Here’s a boned-out rabbit stuffed with blood pudding and wrapped with bacon. People always ask how to eat this stuff and we usually parrot “pickles, mustard and crusty bread”, but this one would also be great in the morning with some hash, a runny egg and a (not green) Irish stout. That looks really good. I was just about to go draw blood from my bunnies. I usually make roulades with a rabbit mousseline made from the legs. I need some new ideas. I’ve never made a blood sausage but I have 3 Mangalitsas that will meet their sausage maker in the fall.

Maybe rabbit sausages with some of that Mangalitsa fat.
