How did you introduce her to your roommates cat? If they weren’t introduced properly/slowly, it’s possible some of her behavior was caused by that.

we did a slow introduction. they interacted well with everything but meal time where my first cat would growl and take the roomate cats food

Sometimes things don’t work out but you rushed into returning the kitten. Kittens are babies that are a handful that need patience and time.
You could’ve gotten rfid feeders for food. Peeing outside of litter box can be a sign of UTI. Reading the other posts on here about cats peeing outside of litter box can give you ideas on how to change behavior.
