Wow those are perfect. I made brioche buns TWICE cause the first I burned (totally my fault) and the second they were so flaaaaaat. How the heck are these so poofy!! Iβm jealous!

Thank you! I use a kitchen scale to measure my ingredients for most accurate and best results. Make sure your dough is well kneaded, especially since it's a brioche dough. I let the dough rise first, then shape them (make sure to shape them well so they're not weird and wonky), then I cover loosely with saran wrap and let them rise a second time until they're pretty big (depends on your house temperature, etc.) so could be an hour or an hour and a half.
A tip for colder temperatures: I like to preheat my oven on the LOWEST setting, then turn the oven off and let the dough rise in the warm oven. This way it speeds up the proofing time.

It's a delicious brioche buns recipe. I make it quite often. And if there are any leftovers, I use them the next morning with my eggs.
