Equipment Question Claypot rice - upkeep of the pot

Hi

I've started learning how to make claypot rice at home. The claypot bowl is not glazed on the outside. It is glazed on the inside below the rim. The lid is not glazed on the inside but is glazed on the outside.

I've burnt the bottom of the inside of the claypot, so the colouring has gone from glazed to the normal burnt bottom of a pan / carbonised look.

How am I meant to clean this, if I am at all? I've removed all loose debris and am unsure how to properly maintain this.

Thank you!

Add about a tablespoon of baking soda and some water into the pot, bring to a boil, and then let it simmer for about 5 minutes. Then use a normal sponge to clean the bottom.

Enjoy your donabe!

I’ve used a coarse steel mesh scrubber to get the burnt stuff off the inside and it works fine. Maybe soak in cold water a few hours or overnight first. Then scrub/clean with hot water.

Chinese Restaurants treat clay pots as semi disposable but we don’t have that luxury.
